Think Bellagio and you instantly think dancing fountains. Watching the spectacular aquatic ballets on the hotel’s eight-acre lake is a Vegas must-do, entrancing adults and children alike. Possibly even more impressive for younger guests is another on-site cascade, found in the hotel patisserie – the world’s largest chocolate fountain, flowing glossily down from high overhead. Kids can’t get their sticky fingers on it (it’s encased in glass) but there’s plenty more to appeal to junior tastebuds, with the many on-site restaurants between them serving up everything from casual poolside snacks to full-on fine dining. Guests entering the property from the valet area are greeted by two, 700-million-year-old Nevada boulders and the movement in the grey, blue and white carpet is meant to represent the Colorado River. Art and photography from around the state decorate the hallway walls leading to chic guestrooms.

There’s nothing understated about The Venetian. It’s top-to-toe extravagance, from the huge, palatial suites to the 20-plus restaurants and bars, world-famous Canyon Ranch spa, 10 swimming pools and impressive recreation of Renaissance Venice, complete with Grand Canal and gondolas. Such full-on lavishness isn’t the first thing you’d associate with environmental responsibility but behind the scenes, a comprehensive sustainability programme works hard to minimise the resort’s impact on the planet and its resources, with a six-pillar plan covering important issues such as reducing energy and water use and sourcing sustainable food supplies. There’s energy-efficient lighting in the suites, charging stations for electric vehicles, a composting programme and water filtration system, and a recently revamped recycling dock that recycles everything from paper and glass to corks and cooking oil.

Built in an enviable mid-strip location, The Cosmopolitan continues to be one of the coolest kids on the block, and boasts some of the most desirable views in Las Vegas. The property is popular with visitors, who stop by for a myriad of reasons – including delicious Spanish-inspired food from Jaleo, unique cocktails from the three-story Chandelier bar and supper club entertainment at Rose. Rabbit. Lie. – but The Cosmopolitan’s best views are reserved for those who step outside. Visitors who catch a concert, grab brunch or dip their toes into the water at the Boulevard Pool can also admire the view up and down the neon-lit Strip. Guests should try to book a room with a terrace; none of these rooms has a bad view (but try to snag a corner room). Those on the north side of the building get a bird’s-eye view of the Fountains of Bellagio as they dance through the night.
